Thawed and refrozen ice cream ( fig.1) results in formation of large ice crystals imparting unpleasant gritty texture. Refrozen ice cream is seen to be of a visibly rougher texture after serving than the equivalent ice cream which has been correctly stored. The effects however are lessened by the incorporation of establishing agents such as carrageen.
